Heat oil in a pan. Add cumin seeds, ginger-garlic and onion paste and sauté till golden brown.
Add chopped tomatoes, Rainbow Sabji Masala, turmeric powder, chilli powder and sauté till the oil separates
Add boiled mixed vegetables, salt to taste and stir. Cover and cook on low heat . Garnish with coriander and serve hot with rotis/parathas.
To enhance the taste of samosa, potato wada, patra, stuffed parathas, etc. use Rainbow Sabji masala along with the spices you usually add.
